Passover Toffee Cookies - Yummy!

Hi! Is anyone else who is keeping Passover getting hungry for cookies? LOL I tried this recipe and really liked it. http://www.angelfire.com/pa2/passover/recipes-pesach/toffee-recipe-kids.html I baked mine in an 8x8 pyrex baking pan and increased the baking time to about 30 minutes, or until the dough was browned and set. You don't have to melt the chocolate chips before hand, you can just spread them on the cookie dough after it's done and they will melt, then you can just spread them with a butter knife. One more thing.... I added about 3/4 of a teaspoon of amaretto extract to the dough to give it extra flavor. You could try adding a flavored extract or just make it as is. We couldn't wait for them to cool and dove right in while they were still warm - melted chocolate and all. They were really yummy and buttery! Enjoy! :-)

oh how i wished i could eat cookies but as I am diabetic it is a no no sound delish though !

Hi! Oh, I'm sorry! I didn't know that. Maybe you could substitute Splenda for the sugar and skip the chocolate on top? There is an awful lot of butter in the recipe too, though.

Hi! Yes, I'm jewish. I didn't always know I was, I found out about 10 or so years ago. I've been very, very happy ever since! :-)

Very different indeed! We're not even Jewish but my kids love the hamentashen every passover season! LOL I worked for the local JCC and learned a lot of great and interesting things, including some of the wonderful dishes prepared for various holiday celebrations! Although nothing in the world will get me to even eat those fish things... gifeldafish or however you spell it! lol
