Pear Crisp Recipe

I thought this sounded delicious so I wanted to share it with you.
Pear Crisp Recipe
This recipe serves: 2
Preparation time: 15 minutes
Cooking time: 1 hour
Ingredients
1/4 cup chopped pecans
1/4 cup all-purpose flour
1/4 cup light brown sugar, firmly packed
pinch of salt
1 dash ground cinnamon
2 firm pears (such as D'Anjou, Bosch or Bartlett)
1 1/2 teaspoons sugar
3/4 teaspoon all-purpose flour
2 scoops low-fat frozen yogurt or low-fat vanilla ice cream
Cooking Instructions
1. Preheat the oven to 350°F.
2. Place the pecan pieces on a baking sheet and toast in the oven until golden brown, about 6 minutes.
3. In a mixing bowl, combine the flour, brown sugar, salt, cinnamon and pecans. Add the butter. Rub the mixture in the palms of your hands, working in the butter but still keeping the mixture crumbly. Set aside in a cool place.
4. Peel, core and slice the pears into 1/2" thick slices. Toss the slices with the sugar and flour. Place in a small, deep baking dish and cover evenly with the topping.
5. Bake in the oven until the top is brown, bubbly and crisp, about 1 hour.
6. Divide the warm crisp into 2 bowls and top with ice cream or frozen yogurt.

That sounds awesome! I'll definitely be keeping this one! I have a pear recipe that I found on the net a while ago and I make often now. I'm not a huge cake fan but this one truly is different. It rocks!
Pear Cake with Cream Cheese Frosting
Cake
1/2 cup vegetable oil
1 cup brown sugar
2 eggs
2 fresh California Bartlett pears
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. ground cloves
1/2 tsp. ground nutmeg
1/2 tsp. ground ginger
3/4 cup buttermilk
1 cup golden raisins (I omit these as we're not raisin fans)
Frosting
6 oz. cream cheese
1/4 cup butter
2 cups powdered sugar
3/4 tsp. vanilla
3 tsp. milk
To prepare cake:
Beat oil, sugar and eggs in a bowl until smooth. Halve and core pears; finely chop pears to measure 1 cup. Combine flour with dry ingredients; mix into creamed mixture alternating with buttermilk. Fold chopped pears and raisins into batter. Pour into a greased 13" x 9" pan. Bake in a 350 degree oven 30 to 40 minutes, until tester comes out clean and dry. Cool in pan 10 minutes; invert and cool on rack.
To prepare icing: beat cream cheese with butter until smooth. Beat in powdered sugar and vanilla. Gradually add milk until icing is smooth and spreadable. Spread icing on cake. (Makes 12 servings)
*note... I buy a can of cream cheese frosting... works just as well! LOL

Pear Crisp with Gingersnap or Cranberry Snap are more delicious, try this -
1) Pear Crisp with a Gingersnap Topping
Instead of the typical oatmeal topping, this Pear Crisp recipe uses gingersnaps.
INGREDIENTS:
2 - 15 ounce cans sliced pears, undrained
2 teaspoons lime juice
2 teaspoons cornstarch
20 gingersnaps
1/2 cup powdered sugar
1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon maple flavoring
1/2 cup butter, melted and cooled
Optional: Whipped or cinnamon ice cream
PREPARATION:
Preheat oven to 350 degrees F. Lightly grease 8-inch square pan. Mix undrained pears, lime juice and cornstarch. Pour into prepared pan. Crush gingersnaps in food processor. Add powdered sugar, flour and baking powder. Continue to process. While processing, pour maple flavoring and melted butter down food shoot. Continue to process until mixture is combined. Crumble over pears. Bake for 25 to 30 minutes or until bubbly. Serve with whipped or ice cream.
2) Cranberry-Pear Crisp
Prep Time: 15 min
Total Time: 45 min
Makes: 9 servings, 1/2 cup each
Ingredients
4 large ripe pears, cored, peeled and sliced (about 4 cups)
2 Tbsp. brown sugar
1 tsp. ground cinnamon, divided
1/2 cup firmly packed brown sugar
1/2 cup flour
3 Tbsp. cold margarine
1 cup POST SELECTS CRANBERRY ALMOND CRUNCH Cereal, lightly crushed
PREHEAT oven to 375°F. Toss pears with 2 Tbsp. sugar and 1/2 tsp. of the cinnamon in large bowl. Place in 8-inch square baking dish.
MIX 1/2 cup sugar, the flour and remaining 1/2 tsp. cinnamon in large bowl; cut in margarine until mixture resembles coarse crumbs. Stir in cereal. Sprinkle evenly over pears.
BAKE 30 min. or until pears are tender. Serve warm.

My husband loves pears, so this would be a great treat for him. Can I also try this with peaches?

I love pecans & I love pears. I would prefer using icecream with it. I like the way you include nutrition facts with your recipes. This is useful, as I always look for this, considering that my daughter needs foods with protein.

This sounds quite yummy my friend , I will try this with my young granddaughter next time she comes to stay , she was just saying today she hasn't stayed over for a while and she loves to cook and bake with me as her mum doesn't have time , no wonder I am cuddly lol , another one to add to my MY LOt recipe book xx

That sounds almost too good. It's not that high in fat either. We have so many pear trees and orchards around here, that this will be a great early fall treat. I am saving the recipe to my files as we speak. Thank you very much for posting it.
