Sauces and ice cream served on the side?

I know of people who ask for their sauces and ice cream to be served separately from the food. This is because they are worried that their crispy filets or waffles would become soggy if sauces were poured on it for too long.
Similarly, ice cream would melt on the waffle and make it soggy.
They want to be able to pour the sauces on their food as they eat so that the crispy filets or waffles would still remain crispy as they eat these.
Do you also ask for sauces and ice cream to be served on the side? Why and why not?

i usually serve ice cream and sauce on the side except in cases of lecheflan and chocolate mousse..
