Cheese Pound Cake

I love things made with Cream Cheese. They are so light and creamy. This pound cake recipe is no exception. It came from a good friend at church, and I make it ever so often when I want something different. It is especially good used as a base for strawberry shortcake. Just add fresh strawberries and whipped cream.
1 box yellow cake mix
4 eggs
1 tsp. vanilla
1 box (8 oz) cream cheese
2/3 cup oil
1/3 cup water
Soften and beat cream cheese with water until all lumps of cream cheese are gone. Add cake mix, eggs, vanilla and oil. Mix all together until smooth. Pour into a greased and floured Bundt or tube pan. Bake at 350* for 50-60 minutes.

You know...my mother in law makes this with a sugar free cake mix, purchased from the diabetic section of the grocery store, and fat free cream cheese.

This is great for summertime. It can be made ahead of time and frozen, and then thawed when you need it. I slice mine prior to freezing, and then only take out what I think I'm going to need.

hi carpenter5, i love your recipe, it is very simple and easy to make. i would like to make it for my family as my mother - in - law like vanilla flavour and everybody likes cakes. so i would love to serve my home made cake this coming saturday to them. thanx once again for that.
