Turning soup into stew

I often end up putting meat that is in large chunks or I don't know how to fix otherwise, into the crockpot, adding some bullion and vegetables and having a nice thick soup. I call it a soup not a stew because it doesn't have quite the thickness in the broth that a stew requires, just tons of solid particles. To make soup into stew do i add flour? Just let it simmer down a whole lot? What's the best way to do it? I am getting a bit tired of plain old soup.
