What do you think about fusion food?

I like fusion food. I've tried those western asian types of cuisines and basically what they tend to do is replace the usual potatoes with rice. Also, they may replace the usual western style sauce with an asian type of sauce. For example lemon butter sauce gets replaced with wasabi cream. What about you? What do you prefer? Have you tried fusion food before? Did you like it? Please share your stories. Thanks.
