chocolate hazenut eclairs

ingredients: One recipe of Paste a Choux Chocolate Hazelnut Eclair Filling: Ingredients: 2pcs whole eggs 3/4 cup fresh milk 2/3 cup sugar 1/3 cup all purpose flour 1/4 cup chocolate hazelnut spread 1 cup heavy cram, whipped 250 gms bittersweet chocolate chopped finely Procedure: 1. pipe or shape the pate a choux into logs of 4 inch long. egg wash, bake in preheated 400F oven for 20 minutes. cool well, make whole on hte long end of the eclair. mkae the long pastry cream fillings. 2. boil half of the milk with half of the sugar. mix half of the sugar and all purpose flour. add half of the milk, when milk boils, add eggs into the flour mixture. pour hot milk over the flour mixture a little only. mix then add all of the hot milk. mix well, add choco hazelnut spread. taste and adjust seasoning. whip 1 cup heavy cream. fold into the main mixture. use this to fill your eclairs. heat chopped chocolate over simmering water or microwave. mix a little. dip eclairs into this mixture let drip and let last drip fall into the eclair itself.
