Can you suggest something that is quick to cook and rich in protiens?

I sometimes keep thinking of what to make for breakfast .My kids want something new everyday.What would be good for them that is made quickly and is rich either in protiens ,vitamins or fibre.

I find sprouted 'Moong' boiled with added spices or stir fried lightly make a very healthy and tasty breakfast.
