Or the most versatile one? One you prepare most often with your meals? My mother-in-law cooks rice nearly everyday, I myself prepare mashed potatoes, yellow rice or instant pasta. Vegetables are also a good side dish. Any good creative ones?

I love any type of potato as my side dish. I find that baked potatoes are the most versatile, though. I like to put Heinz 57 sauce and sour cream on them. Also, some people like to add ranch dressing. My personal favorite, though, is the loaded baked potato. Sour cream, bacon bits, butter, chives, salt, pepper. Yum. I think any type of instant rice also makes a great side dish. Try the Lipton/Knorr brands!

ooh i havent had a baked potato in a long time! lol and no potato's in the house either argh!! those Lipton/knorr brand rice and pasta side dishes are very very good! but i think the most frequent side-dish that is served in my house is probably a salad. especially the Asian Teriyaki Noodles! LOVE that one! lol its quick and easy to make while cooking the main dish. and each person can pick what kind of "toppings" they want, diced or shredded cheese, tomato, cucumber, even diced ham or turkey with croutons or bacon bits. and we usually have at least 3 different kinds of dressing in the house.

My favorite sides are vegetables...sweet potatoes, roasted or mashed potatoes, peas and carrots, or steamed mixed veggies.

We're stuck in a rut because of my son lol, so it's either corn or steamed carrots. I'm not that creative with that.

I go for the plain and simple baked potato, just add salt for taste. Generally I microwave them and they are done in less than 10 minutes with no hassle. The fact they are healthy is just a plus.
