What's the best ingredient to put in your laing?

I like loads of pork in mine! Some people put dried fish in their laing but I can't live without my pork :) You can use lean ground pork if you want to cut down on fat.

I don't really care so much about the type of meat as I care about the vegetables in it. Either pork or fish is fine, but I will not tolerate laing that fails to tickle my tongue in the very least. It has to have lots of chili.
