Yummy Veggie Recipes?

I need to increase my intake of veggies, but I need help. I am tired of salads, but I don't know what to do other than just steam some stuff. I am looking for simple and quick, but tasty. I'll even take one dish meal ideas that will give me everything I need all at once....any suggestions?

What about Veggie Curry? I think it's really tasty and you can dump in those veggie you like. I personally love it because it's really delicious. Here is the recipe: VEGETABLE CURRY (Serves 2) Ingredients 1 cauliflower 1 tomato 1 potato ½ onion 4 teaspoons curry powder 4 teaspoons Indian ginger (yellow ginger) powder 3 tablespoons oil 2-3 slices ginger ½ cup of water Steps 1. Wash cauliflower, drain and dice. 2. Dice tomato, potato and onion. 3. Heat up a pot, add oil, then the chopped onion to stir-fry until fragrant. Add potato and tomato, stir-fry for 3-5 minutes. Add in curry powder, Indian ginger powder, ginger and water to cook for another 10 minutes 4. Add cauliflower to the pot and cook until tender. Serve immediately. I like to throw together quick veggie stir fry with mixed frozen vegetables, oil, soy sauce, and garlic. I serve it with brown rice. I also like to make casseroles and pot pies. CRUST 3 cups Whole wheat pastry flour 1/2 tsp Salt 1/2 cup Canola oil 1/2 cup Water PIE FILLING 1 tbs Oil 1/2 cup Onion, chopped 1/2 cup Button mushrooms, sliced 1 Garlic clove, minced 2 tbs Flour 1/2 cup Non-dairy milk 1 cup Vegetable stock 12 oz. Frozen mixed veggies (peas, carrots, corn) 2 Potatoes, chopped, and microwaved until tender Basil, sage, Salt and pepper, to taste Preparation Preheat oven to 375 degrees F. For the crust: Combine flour and salt. Add oil and stir until dough forms small, round, balls. Mix in the cold water. Form into a ball and divide in half. Roll out onto a floured surface, and then place into a pie plate. Poke with a fork and bake for 10-15 minutes. Roll out the second half for the top of the pie. For the filling: Heat oil in a saucepan and saute onions, mushrooms, and garlic until onions are translucent. Stir in the flour and cook 1-2 minutes, stirring constantly. Slowly whisk in the milk and stock and cook until thick and bubbly. Add veggies, herbs, salt and pepper and heat through. Pour into the crust and top with the unbaked crust. Press edges lightly together, but do not seal. Bake for 25 minutes or until the crust is golden.
