What I made for dinner....

Low fat, high fiber and yumbo! P.S. I added onions and green pepper Low Fat Corn, Black Bean and Tomato Salad INGREDIENTS: 2 cups corn kernels (about four ears of grilled corn, or use frozen or canned) 2 cups less-sodium black beans 2 cups grape tomatoes, halved Jalapeno or Serrano pepper, finely chopped 1/4 cup finely chopped cilantro 1 tbsp olive oil Juice of 1 large lime 1 tsp cumin PREPARATION: Combine corn, black beans, tomatoes, jalapeno/serrano chile pepper and cilantro in a medium bowl. Whisk oil, lime juice and cumin together. Drizzle over salad and toss until coated. Serves 6. Per Serving: Calories 141, Calories from Fat 28, Total Fat 3.2g (sat 0.4g), Cholesterol 0mg, Sodium 157mg, Carbohydrate 23.1g, Fiber 5.5g, Protein 5.1g

That sounds nice! I have to try your recipe next time. I cooked dinner yesterday too and I cooked the following: SEAFOOD IN A PUMPKIN (Serves 4) Ingredients 1 small size pumpkin 4 shrimps 4 scallops 80g fish fillet 80g cuttlefish 250ml chicken stock 2 tablespoons oil 1 teaspoon corn starch 1/3 teaspoon salt ¼ teaspoon sugar some garlic, fine chopped, and some ginger, sliced Steps 1. Open the pumpkin up by cutting off the top of it. Remove the seeds. And steam over boiling water in a large pot for 15 minutes. 2. Heat up a frying pan. Add oil, and then add garlic and ginger to stir-fry until fragrant. Add in sea-food to stir-fry for around 5 – 8 minutes or until medium done over medium heat. 3. Pour chicken stock into the pan and bring to boil. Season with salt and sugar, and then add corn starch in and keep stirring to thicken the sauce. 4. Pour the seafood into the steamed pumpkin. Serve immediately. It's really delicious! I love pumpkin!! *laughs*

That sounds good....I'd be hard-pressed to find a pumpkin this time of year in Pennsylvania...lol
