local dish for all...

what local/native dish from your country that you're most proud of? if you know the recipe please post it here.. if you dont thats ok too. my favorite filipino dish is 'sinigang na baboy' or 'tamarind soup based pork'

our local unusual thing here is fish chips and pea wet (which is like pea juice) you can only get it round here where i live. I also love tatty ash which differs from area to area some people have it as below Tatty 'ash 2 tins new potatoes 2 tins mixed veg 1 tin baked beans 1 lb mince 2 onions 2 cloves garlic 1 tbsp gravy granules tomato ketchup ½ tsp black pepper In a pan put potatoes and veg and just cover with water. Bring to the boil and add gravy granules and black pepper. Simmer for 20 minutes. Meanwhile, fry mince, onions and garlic slowly with no extra oil. Once fried, add to pan along with baked beans. Heat through and serve. Add tomato ketchup to taste. but i prefer to used corned beef ash see below 2 tins of corned beef you will need 1 medium onion finely chopped and 6 large potatoes-boiled and cut into 1/2" cubes. (depends on how many you are cooking for!) Saute the onion til soft,add the potatos and corned beef. You can add vegetables if you want to at this point aswell my mum adds carrots and peas but i don't as my boyf doesn't like it that way. Add the gravy simmer. We usually add dumplins or crust on top if we have time or want to depends on the mood. its really just a simple stew type dish but you'll find every household makes it different my mum and my sister make it different to me and my sister call it lobby.
