Does anyone know a good lemon curd recipe? Im a vegan but you can just let me know your recipe and I'll adapt the ingredients it's for my blog. I dont know where you'll post the recipe so I've done a post on my blog and if you want to add the link of a recipe or the recipe to my blog as a comment please do. then add a link of your blog or site and i'll visit and leave a comment as a favor i just want to know some good and different or any lemon curd recipes for making lemon curd dishes and pies. It is particularly useful when entertaining and short on time." INGREDIENTS * 1 cup white sugar * 3 eggs * 1 cup fresh lemon juice * 3 lemons, zested * 1/2 cup unsalted butter, melted DIRECTIONS 1. In a microwave-safe bowl, whisk together the sugar and eggs until smooth. Stir in lemon juice, lemon zest and butter. Cook in the microwave for one minute intervals, stirring after each minute until the mixture is thick enough to coat the back of a metal spoon. Remove from the microwave, and pour into small sterile jars. Store for up to three weeks in the refrigerator.
