Good Summer Recipes for those HOT Days!

Do you lose the drive to cook anything in the summertime? I know I do, but I want to provide healthy alternatives for my family. We live in AZ so it's too hot to grill out, turn the oven on, etc. What are some cool dishes that still have a dinner feel to them?

We have a lot of sandwiches in the summer, and salads. I also have a George Forman grill, and so I can make hot sandwiches as well. There is also nothing like homemade subs, " made just the way you like them" If you have a "george". You can make some really good chicken salads! You could also make a macoroni or potato salad, and get 2 days out of it. I swear by my George & Electric Skillet.

We like to use out slow cooker a lot during the summer months so that we are still able to enjoy our favorite foods. We also eat different kinds of pasta salads where we just add some kind of meat.One of our favorites is a a pasta salad made with ranch dressing and shrimp. Just cook two pounds of your favorite kind of dried pasta by the directions on the package. Mix together about a pound of pre cooked salad shrimp, a cup an a half of ranch dressing, three chopped green onions, and a half cup of chopped celery. Toss in with the pasta that you have already cooked. You can refrigerate this until you are ready to eat. Make extra so that you can also have it later in the week.
