What do you stuff your chicken with?

I tried a new recipie today that included spinach and cream in the stuffing for a stuffed chicken. I will have to post and let you all know how it came out.
Usually I stuff my bird with breadcrumbs, spices, herbs, carrots, onions, garlic, and celery with a bit of chicken stock. My family really loves it and we use the leftovers for soup or enchiladas the next day.
I want to try some new stuffed chicen recipes so please share with me what you stuff your bird with.

I don't usually "stuff" my bird, but the stuffing you describe sounds lovely. I do hope you share it and let us know how it turned out!
If I do put something in my chicken, it's apple slices, oranges or lemons. I've also put cranberries inside. They add spectacular flavor to the meat.
