Braised Eggplant With Seafood Sauce

Ingredients: 400g eggplant 50g seafood sauce 3 clove garlic 1/4tsp chicken powder 1/3tsp salt 1tbsp salad oil 1/2 stalk spring onion, chopped Method: 1.Peel the eggplant and cut into the thick strips. slice the garlic cloves. bring a pot of water to boil and blanch the eggplant strips until cooked. Remove and drain well. 2.Heat up a skillet with salad oil. Add in seafood sauce and garlic slices, stirring until fragrant. Return the eggplant strips and stir. Sprinkle in the chopped spring onion, season and stir until all eggpalant strips are evenly coated with the sauce.
