Puerto Rican Foods?

I grew up eating typical Puerto Rican foods cooked by my mother and grandmother and learned a bit of it myself. I found for my generation, a lot of us have lost the art of cooking like our abuelitas and mamis did/do but I've also learned a few shortcuts that they didn't have that luckly we have today. Anyone have their favorite way of cooking these typical meals today? I use the Goya fozen dough round disks for making empanadillas, that way all you do is make your meat (using frozen goya recadito or sofrito), stuff and refry. It's simple and all I've taught all my friends to make it here in the South (AL) and they love it.
