I got this recipe from a post on lowcarbfriends.com. I tried it and it is my favorite way to make roast now. I will never do the traditional one again. lol. 1 roast, can be pork or beef 1 can rotel tomatoes with green chiles 1-2 cans green chiles Place roast in crockpot, add green chiles and tomatoes. Cook for 8 hours or so. I usually do this overnight. I also used beef roast, as I'm not a fan of pork other than bacon. One can of chiles was enough for me, made it just spicy enough to warm my belly, but not enough to burn the tongue off. As a lowcarber, I put this in a bowl with cheese and sour cream, lettuce and tomatoes... splash of taco sauce. GOOD stuff! I could have done the whole low carb tortilla, but naw, it was all good as is.
