Chocolate chips, bananas and caramel!
What I usually do is put the batter in the pan first and then sprinkle the chocolate chips, or lay the bananas or swirl the caramel. It's like making a pancake surprise!
I love it when the caramel drips when I cut the pancake. Yummm!

Well, I never have done that before. I should try it sometimes since I don't usually add anything to my pancake.

Actually I do not care that much for pancakes or hotcakes and if I do have them, like buckwheat pancakes with real maple syrup plus a couple of rashers of crisp bacon and real butter. The only time we have them is when we go to the Pancake House and it happens to be breakfast time, and then only when we are on vacation. However, crepes are another matter, either with lemon and white or with strawberries, rolled up, and a little sour cream on top. Wow!

Ha, if you only knew. I am a sweet freak, so I have been know to add, cinnamon, nutmeg, sugar, banannas, vanilla, and all kinds of other oddities. I have not made pancakes in a long time. I guess that is a true blessing for my health.

I love Cinnamon Apple Puffy Pancakes....I have included the recipe for you.....
Ingredients
2 granny smith apples; peeled, cored & chopped
4 lrg. eggs
1/4t. cinnamon
1c. flour
1c. milk
pinch of salt
8T. unsalted butter
1/4c. confectioner's sugar + more for sprinkling
3T. fresh lemon juice, for sprinkling
Directions
Preheat over to 425 degrees.
Beat together the eggs & cinnamon in a small bowl.
Lightly beat together the flour, milk, salt & egg mixture; it's fine to leave the batter a bit lumpy.
Melt the butter in a 14" skillet with a heat-proof handle.
Add the apples & saute until tender.
Turn the heat off under the pan and pour the batter over the apples.
Bake 15-20 minutes until puffy and golden brown.
Sprinkle with the 1/4c. sugar and return to the oven for a minute or two.
Sprinkle the pancake with lemon juice and serve immediately.
Pass more sugar for sprinkling at the table.

I love blueberry pancakes also. Sometimes I will put choc chips in my batter for something a bit sweeter.
