Do you prepare Pancake?

We are usually too busy in the mornings to cook. SO... pancakes have become one of our favorite evening meals. I cheat, and use a pancake mix... like Bisquick or Hungry Jack, but the kids absolutely love them. We serve them with either sausage or bacon, eggs and of course syrup. We even have Orange juice to complete the "breakfast!" LOL! I vary the recipe slightly by adding syrup, vanilla or cinnamon to the batter. Sometimes I substitute apple sauce for the oil. (this works better for waffles.) If its a batter from the box, I always add a Tablespoon of lemon juice to it. For some reason, the pancakes are fluffier. I never thought of adding carmel syrup on them. Hmm... I may have to give that a try next time we have pancakes.

I make them in the morning most of the time, my daughter loves then so I make them once a month and I freeze the extra's that way she can have them whenever she wants but I don't have to go through the trouble of making them all the time =) Every now and then we will have breakfast for dinner with pancakes, bacon, eggs and toast! yummy!!!
