We had a chicken and rice casserole for dinner tonight. We had corn as a side dish, and yogurt and fresh fruit for dessert. Tomorrow, I'm basically taking the night off from cooking. My husband is going to bring home some chicken strips from the deli, and I'm just going to throw them, some lettuce, cheese, and some kind of sauce (ranch for my toddler and me, barbeque for my husband) on tortillas and make quick and easy wraps. We will probably also have carrots and ranch or my husband and son will have broccoli and cheese.

I have to go to school till 8:45PM tonight so I don't think I'll be eating a big meal for dinner. I may just run up to the cafeteria and grab a sandwich before class starts.

Actually tonight was eazy. Once a year we have a corn and hotdog roast at the museum. They have home grown corn roast and the biggest and best hotdogs I have ever seen. It's by donation and the money goes to support the museum. I met some ladies from the next town and we all had an excellent visit. Take Care.

We had BBQed boneless pork in the crockpot, and we also had rice with a veggie. My daughter had to work, so we really didn't do much for the Holiday.

Salad. I make a mean salad. I use great stuff in my salad, like avocodos, artichoke hearts and pine nuts. Ny salad is so hearty, I don't need anything else. And sometimes I throw in some grilled chicken or shrimp. I just crave raw vegetables.

Hey keeper, its been a while :) Tonight i am having something REALLY easy cause i have been babysitting at someone elses house all day, so i dont have a lot of time to cook when i get home before its dr phil and then bath and bed time for the little one. We are having hamburger helper the lazagna kind. I like the chilli kind better but i dont think my daughter would go for it, and plus the heartburn for me would be killer!
