Do you crack an egg in your grits?

I can remember growing up and visiting my grandmother's home at Christmas time. Eggs and grits were a staple of our breakfast every morning. And, for anyone outside the South who might not know what a grit is, well, you're missing out on something really special. (Most times you can buy grits online if they are not available locally.) The trick to cooking really delicious grits is how you flavor it. Sometimes we flavor our grits with real chips of cooked bacon, ham, shredded cheddar cheese, or American cheese. And, of course salt and pepper. Sometimes we use butter. But, for times when we want a buttery taste, but don't want to use butter, we simply crack an egg into the nearly done grits. There's less fat per serving than when you use butter. The trick is to wait until the grits have absorbed the water or else you will end up with a big mess. If you prefer, you can whisk your egg before adding to the grits. Either way, be sure to stir egg down into grits mixture so it can cook. Hope that home-cooking tip helps you out. I seldom have the grits for my breakfast for the chinese may be not used to that kind of food,but it seems to be great as what you recommended,i'd like to have a try somehow.

Can you explain to me what goes into grits? I'm from Manchester, England and have never heard of them. I am howver vey curious, always like to hear about different types of food. Plus i love eggs!!
