Butternut squash

I love this squash baked, add a little sweetener and a dash of cinnamon and some butter to it. I know that you can make soup out of it. I have heard of pies made with butternut squash. Anyone out there have good ideas of how to use up lots of squash quickly? It's harvest time and I would like to put some up for later. Does it freeze well? Any other ideas? Happy posting..

I have frozen regular squash and it does okay i like to make a batter of eggs and milk then dip them in flour and deep fry them

Hello cajunhellcat, Now, this is interesting. I will be trying this one, I'm getting of the same old thing. Baked squash is good, but I need a change now and then to keep me happy. Thank you for posting this way of cooking squash. Happy posting..

Butternut squash is one of my favorite things to cook! :) For Grilling: I like to slice them- try leaving the skin on and soften them in some boiling salted water, paper towel them until dry, then brush them with oil or butter, and sprinkle on the following spice mixture: One teaspoon of salt, one teaspoon of black pepper, one half teaspoon onion powder, one half teaspoon of garlic powder, one teaspoon ground nutmeg, one teaspoon ground cinnamon, one tablespoon of sugar and a half cup of cooked bacon bits- finely chopped. Wrap the slices in foil, then put them on the grill near a cool spot-- for slow roasting. My husband loves squash. We moved this June and were unable to plant a garden this year. I really miss it. I was also surprised at how much we are spending on groceries without having our own produce.I think to freeze squash you need to prepare it first,but I am not positive about that.

Hello lightningMD, Isn't it amazing how we don't realize how helpful a garden is until we don't have one? We didn't have one this year either, and I have spent a lot of time at the farmer's market buying produce. So while it is available, I'm trying to enjoy it. Butternut squash soup is amazing. With carrots and other vegtables. It's very thick and filling. Also it freezes very well. It's one of my favorite soups.
