What do the lyrics of Scarborough Fair mean?

I have a recipe for what I call "Scarborough Eggs" which is basically scrambled eggs cooked in butter and cream with ground parsley, sage, rosemary, and thyme. The idea of the recipe came from a classic Simon and Garfunkel song Scarborough Fair which I often heard as a kid. The song mentions the four herbs. But to be honest I don't know what that song was about or meant. Does anyone?

I believe it is about bitterness after a break up "She once was a true love of mine" but then for her "then to be a true love of mine" she has to complete tasks all of which are impossible. so in other words he is hurt and they will never get back together.

oh I see. But where do the herbs fit in?
