what makes a french fry grade "a" quality

Its got to be golden brown. I think the carnival fries are great too. Just cut the potato up but leave the skins on and then fry them up. Delicious!

A grade"A" potatoe,fresh grease at the right temprature(sp)and cooked for the right amount of time. I usually find that at 250 degrees and 5 minutes bring the right type for me.
