The thing I like best about casseroles is that they are fast to put together and you seldom dirty more than a cutting board, a spoon, a knife, and the casserole dish itself. If you are imaginative you can make a completely balanced meal in a casserole, including all four food groups. My stepson teases me because we eat many casseroles, but I think I am basically too tired to get more involved in the kitchen most of the time. I try to vary my ingredients so it doesn't always taste the same. If I come up with a really good casserole we usually laugh because I throw it all together and can probably never put the same thing together again another time again.
