I love orzo...I've never heard of making a casserole with it...sounds interesting.

Ok Pass it on. I am always in the search for a new recipe. How long does it take to prepare? What's in it? Is it a holiday day dish? How many people can it feed.What would you serve with it? By the way, welcome to Mylot. We insomniacs love it! LOL

It only takes about 15 mins to prepare and then 20 mins in the oven. It's incredibly easy. It's not necessarily a holiday dish, but a good dish to bring to a party.... why not the holidays? :-) Here it is!! Baked Orzo Casserole 1 and 1/2 cups dry orzo, freshly cooked (orzo is rice shaped pasta) 1 and 1/2 cup Monterey Jack cheese, grated 3/4 cup diced red bell pepper 1/2 cup canned, diced green chiles, drained 1 and 1/2 cups sour cream 3/4 cup grated parmasean cheese 3 tbsp. butter Preheat oven to 450 degrees Lightly butter a 1 and 1/2 quart souffle dish Combine cooked pasta, jack cheese, bell pepper and chiles in prepared dish. Spread sour cream over all and sprinkle with parmasean cheese. Dot with butter. Bake until golden and puffed, about 15-20 mins. It's not low cal, but it's yummy! Good luck with this.
