Any tested mini-cheesecake recipes?

I wanted to find a recipe I used YEARS ago (before I even had the internet) but have had no luck locating it. It was mini strawberry cheesecakes made in a muffin tin.... All I can remember is I used a graham cracker crust, cream cheese and strawberry extract for the filling..... Any one have any good recipes so I can just use yours instead?

I don't have any good recipes for that. I wish that I did. Now I am hungry and cheesecake sounds really good. The only problem is that even if I had any I couldn't eat it, cause I am dieting.

aweeee you could use the neufratchel (SP?) cheese. It has less fat and calories.

This isn't exactly what you're talking about but I used to love these when I was growing up and they're easy to make. Mini cheesecakes 2 (8 oz.) pkgs. cream cheese 2 tbsp. lemon juice 3/4 c. sugar 1 tbsp. vanilla 2 eggs 24 paper baking cups 24 round vanilla "Nilla" wafers 1 can (21 oz.) cherry pie filling Mix together cream cheese and lemon juice until smooth. Add sugar and vanilla, beat in eggs until smooth. Line muffin tins with 24 paper baking cups. Place a vanilla wafer in each. Spoon batter into cups dividing evenly. Bake at 350 degrees for 20 minutes. Cool. Spoon cherry filling over top of each.

The lemon juice probably isn't necessary and you could probably use any flavoring you'd like in place of the vanilla...strawberry, almond, etc... I don't blame you as far as considering the no-bake...it's quicker and easier. :) Good luck!

Thanks. I'll use that one.... If i had more time I'd try it with strawberry extract instead of the lemon juice but it's for an office thing tomorrow. lol I'm half tempted to just go get a jello no-bake mix.
