Sheep cheese dumplings (Bryndzové halušky) are one of the most known Slovak traditional dishes. Probably the most unknown thing about it is the sheep cheese (in Slovak language called "bryndza"). I didn`t notice that this kind of dumplings is eaten somewhere in the world expect Slovakia and it`s adjaced countries. I`m providing you the quick recipe to show what they are: Ingredients: 2-3 Potatoes Flour 4-5 tbsp Salt 1 egg piece of bacon bryndza Instructions: Peel potatoes and finely shred them. Add egg and flour. Make a dough that is not too tough but not too watery. You may use more or less flour or add little bit of water if it is too tough. Add 1 tsp (teaspoon) of salt. Boil water with 1 tbsp (tablespoon) of salt (use middle sized or big pot). Then use teaspoon to drop a little bit of the dough into the boiling water. Be sure the water is always boiling. When halusky are done they will float on top of the water. Pick them out with a strainer. Cut up little pieces of bacon and and fry them. Serve halusky with the bryndza on the top (or you can mix into them like it is done on the picture). Sprinkle with the bacon pieces. Notice: If you don`t have bryndza you can replace it with following cheese sauce. Feta cheese + cream cheese + 3-4 tbsp of milk. Heat everything together (mix all the time).
