Why do businesses raise prices during peak season?

Here in Florida the fruitmarkets, grocery stores, fleamarkets etc always have good deals 6 months out of the year when snowbirds are not here. But the minute they start arriving we see the price of everything go up! I understand that this is their big money making time but what about the rest of us that live here year round...why should we have to pay the higher prices? Even the restaurants seem to raise their prices. Heck we can't even get into a restaurant during those months unless you want to wait a long time for a table.
