Why do web templates always use orem ipsum dolor sit amet etc?

I use a lot of web templates and there is always this orem ipsum dolor sit amet, etc, a lot of it. WHY do they do that, and what on earth does it mean? Is it some standard thing they put on? I can't see why a nice little poem or something wouldn't work just as well. Does anyone know about this please?

I think the language is latin and I see it all the time for any default template, either it before a webpage or offline write tools (microsoft temps). I think it's easier to fill up space with that and it's a universal language.
