How do you cook seaweed? One for Chinese cooks to answer!

I buy fried seaweed as a side dish when I order Chinese food but I wonder what TYPE of seaweed is used, and whether it has to be flown in from China, or whether the seaweed wherever the cook happens to be is suitable. How is it prepared and what other ingredients join it in the frying pan to give it that wonderful, crispy, salty, sweet taste? I am salivating in anticipation of answers to my question!

Well, the reason for the discussion is that I do enjoy seaweed fried by our local Chinese take away but it is very expensive. We are going to live by the sea and there will be LOADS of seaweed, but how do you cook the stuff?????? Now, stop laughing. hugs

think you said fried I would think salt and peper in olive oil

I dunno really, I haven't seen many Chinese cooks that cook seaweed, my parents themselves are Chinese cooks and they have never ever cooked seaweed. But, I suppose you can cook it sushi style though. Add some pepper or seasame and it can taste really nice. But, if that fails, theres always the internet to search for new recipes and other stuff :D Hope this helped, Thanks~
