Potato Salad! Macaroni Salad! I love both and it is that magical time of the year where we need to make it. I love all kinds. Please share your best recipe and tell me what makes it the best!

I always end up being the designated potato salad maker for parties. I make mine the way my mom did, cooking whole potatoes until they are fork-tender, peeling them when cool enough to handle, cutting them into small cubes, then adding the seasonings, finely chopped onion and celery, Hellman's mayonnaise, and chopped hard boiled egg. While the potatoes are still warm, I sprinkle over a dressing made with a little sugar dissolved in vinegar with salt and celery seed added. I mix it in so the potatoes absorb the flavoring. Then I stir in the onions, mayonnaise, and last the chopped eggs. When I have fresh chives, I put some in, or I might add some chopped olives. I might put egg slices on the top like my mom did, and sprinkle it with paprika, but the salad disappears so fast I don't think anyone notices if I try to make it look nice. I think the important thing in making potato salad is to use real mayonnaise instead of miracle whip or similar dressings, as they are too sweet. The vinegar dressing with the sugar and spices adds a lot of taste too. I've made macaroni salad pretty much the same way.

Hi. I love both too. I usualy add chopped hot dogs or tuna in my macaroni salad. I make a lot of variety of salads. I love all. One of my favorites is an aubergine salad. Chopped aubergine in cubes and boil. Let it drain. Seasoning it with chopped onion, fried garlic, black pepper, sharp sauce, salt, oil,oregano and vinegar. It is better if you let it stay in the seasoning for hours, I use to make it at the morning to serve in dinner. Cheers

Never had hot dogs in my mac salad. That is a new one for me. The aubergine salad sounds very good.
