hi dear! well, i just saw people do this. i didn't really do this myself. they just put chocolate on a bowl (aluminum or stainless steel), then put it over a bigger basin. then they put boiling water on the bigger basin. the chocolate just melts. then they dip the strawberries to coat each fruit with chocolate, then transfer on a plate to allow the chocolate to cool and harden, i guess if the chocolate is boiled, that will be too hot and it will cook the strawberry. melting chocolate this way will just allow the chocolate to liquefy without bringing it to a high temperature. this way, your strawberry will still be fresh and crisp and will not lose its fruitiness, yet it is coated with chocolate. oh yum! now my mouth waters...i am on a diet you know. lol good day and God bless you!

I have a fondue pot that works with a candle underneath. I melt my chocolate in there, dip the strawberries, and after eating a few, I put the rest on a cookie sheet with waxed paper, and put them in the freezer for a while.
