How do you get a veggie hater to eat vegetables?

My husband is a die-hard, dyed in the wool vegetable hater. He knows how healthy they are and he'd like to eat more but he can't get over his aversion to them. How do you incorporate veggies into a veggie hater's diet? He won't drink V8, and even chopping the vegetables into tiny bits and disguising them with something else doesn't help. Do you have a anti-veggie person in your household?

Not in our house, no. But my hubbys best friend is like that. He often reacts like he thinks veggies are poison. Not much you can really do. Unless duct taping your hubby to the floor and force feeding him is an option? Maybe some cheddar cheese sauce would help.

Oh my goodness your husband sounds just like my father....he will not eat veggies to save his life. He acts like its some type of crime or something. I need to know the secret to your discussion as well. Me i love veggies!! I will eat them everyday all day. Without meat i may add. I am not a vegiteraian but you might as well call me that.

You know exactly what I mean, then! LOL Mention the word "green bean" and you'd think someone just punched my husband in the gut. If it grows from the ground, he won't eat it! Hopefully someone will come up with a magical solution to the problem. LOL Thanks for your response!

I didn't used to be a fan of vegetables either, but I've found a few solutions to that problem. Here are a few things that might make veggies a little more palatable: Veggies sliced or shredded thinly in lasagna- obviously tomatoes are a good idea for a tomato-sauce-based lasagna. Spinach is good in red or white lasagna, and I really like thinly sliced summer squash or zucchini in a white lasagna. Deep-fried veggies- not the healthiest in terms of fat content, but some people really like breaded, deep-fried veggies, like cauliflower, dipped in ranch dressing or cheese sauce. Cheddar-broccoli soup is good with the broccoli chopped up really, really tiny. Mostly you just taste the cheese. Panera Bread has really good cheddar-broccoli soup. Shepherd's pie- ground beef or diced beef, potatoes, gravy, and veggies usually baked in a crust or without a crust in a casserole dish- kind of like a pot-pie except the potatoes are usually mashed. Green beans work best, particularly canned ones, because they don't really taste all that vegetable-y. Salsa- has tomatoes, onions, and usually peppers, but most people don't think of it as a "vegetable". Also, even if your husband won't drink V-8, try giving him V-8 Fusion or Juicy Juice Harvest Surprise. Both of these juices contain both a full serving of veggies and a full serving of fruits, but you can't taste the veggie at all. It just tastes like fruit juice.

You could try some interesting recipes that would make it totally irresistible for him. In fact, you can even add some meat to the veggie recipes so that he sure loves what he eats.
