Oyster sauce. need advice

I have had dishes with oyster sauce in Chinese restaurants and they were very good. They didn't taste fishy like oysters, but I bought some oyster sauce and I just tried it . It tastes very fishy. I'm making beef stir fry tonight with London broil and I'm just wondering if it will taste fishy or after I cook it I won't notice. I bought oyster sauce because all the other sauces were sweet and or curry which I would prefer on chicken instead or pork. So what is the best sauce for beef stir fry if you don't want it sweet but just very flavorful? Any suggestions? Like in the restaurants when I order beef with broccoli or Hunan beef or beef with scallions mmmmmmm. What sauces do they use for them?

i've never tasted oyster sause on its own, but it won't make your dishes taste fishy. when making stir-fry i use it a lot. its like a salty seasoning that helps the flavor. my husband uses it in his fried rice and when you make minute chicken oyster sause is a main ingrediant. mix it with a little soy sauce (shoyu) and sugar. fry some cut up chicken pieces (floured) in oil and when the chicken is almost fully cooked put the sauce on. sprinkle with green onions and sesame seeds (optional) and serve over rice. i know i have a Chinese cook book with beef broccoli in it, but i can't find it right now, depending on the restaurant and the cook, the recipe can be different, but its a basic soy sauce recipe. here are some links i found http://www.cooks.com/rec/search/0,1-0,beef_broccoli_stir_fry,FF.html

Thank you. I made a stir fry and I must have put too much oyster sauce in it because It was much too salty. I didn't realize that oyster sauce was so salty. So now I know how to use it from now on. Just a little to make a better flavor. It didn't make the food smell or taste fishy. When you cook with it, the fishyness goes away like you said. Thanks for your advice and the link.

Sure sure no problem! Just sharing my ideas and of course sharing with my fellows here have been doing all this time in their food. Yes if you want to thicken the sauce you can put some cornstarch but always balance the flavor so try to taste it once in a while while cooking it. I think cornstarch have the tendency to make the taste bland, so balance it out. enjoy your meal!

Thanks. You've been very helpful. I did my stir fry and it was too salty. I put too much oyster sauce in it and soy sauce. I know now what to do. My stir frys should be real good from now on. Thanks for your help.

Hi I'm not a master of any dishes, in fact I didn't even took formal culinary lessons. But living in an oriental cultured society I can give you some tips about chinese dishes. Basically, most oyster sauce doesn't really have fishy taste in it. And if your brand does, put some ginger to your dish because basically ginger can somehow remove the fishy smell in dishes. And actually it has a nice blend of sweet and salty with some savory taste in it. I have some suggestions for your beef dish if you don't mind. If you will use the oyster sauce for your beef stir, try to use sesame oil as your oil to have a good smell to the beef, then also put some garlic and stir it with the sesame oil. Ok the oyster sauce can tend to be too flavorful so you can add small amounts of water then have some trial and error when tasting the sauce. If you feel it lacks some flavor put some more oyster sauce or salt, if you think it's too flavorful try to add small amounts of water. And to add some flavor put some "5 spices" to your dish, with this spice you can have the oriental smell you need for the dish. Then when your dish is done put some finishing touch of using sesame seeds on top when serving it.

Wow you were so informative. Thanks. I just cut my beef real thin and put it in a bowl with soy sauce garlic juice and sesame oil and ginger to marinate it for tonight. Then you sent me this and I feel much more confident about what I did. I guess I had good instincts. I also was gonna put toasted sesame seeds on it at the end. I was just experimenting cuz I didn't know the exact proper way to do it. So I guess I did good. Thanks soooo much. I'll add the water to the sauce if it is too strong like you said and cornstarch to thicken a bit? Over chicken fried rice. Alright, Thanks, You're awesome
