Soft serve ice cream

I love ice cream. I wish I could eat it every day but my hips won't let me. I really like regular style ice cream with so many flavor that are out there on the market these days. Sometimes though, I really get in the mood for some good soft serve ice cream. So my question is when it comes to soft serve ice cream what is your opinion of who sells/makes the best? Also why does the soft servce ice cream at the Chinese Buffet restaurants taste so much better than those at ice cream shops? Is it because it's ice milk? What is the difference between soft serve ice cream and ice milk? Does anyone know? Is one better than the other for you?
