hmmm.....just saying chicken make me hungry. Chicken the universal meat of choice that you can mix with a variety of other dishes. There are so many ways to prepare chicken from; chicken soup, chicken pie, chicken salad, baked chicken, fry chicken, BBQ chicken you name it. My recipe for Jerk Chicken; 6-8 servings. Ingredients 1. 5 large cloves of garlic 2. 2 strips of fresh or dried thyme 3. 1/4 cup ground allspice 4. 2 tablespoon freshly ground pepper 5. 1 tablespoon ground pimento 6. 3 Scoth Bonnet peppers 7. 5 stalks of whole scallions, chopped 8. 1 1/2 tablespoon salt 9. 2 1/2 or 3 pounds boneless chicken Instructions 1. Combined ingredients 1 through 8 in a food processor with 1 cup water and blend into a sauce. You will need sauce to base your chicken to be merinated and sauce during grilling and sauce after if you wish, so do not use everything at once on your chicken. 2. Place clean chicken into a shallow baking pan. Using a sparing knife make small incisions all over your boneless chicken then pour sauce over chicken and cover with plastic or foil paper and set aside to merinate for 1-2 hours or overnight if preferred. The longer it merinates the spicier it will be. 3. Preheat grill pan in oven at 425 degrees, then reduce heat to medium low once you add your chicken. You should also base your chicken with some of the jerk sauce that was set aside. Rotate chicken until slightly charred. Note: 1. Maximum time is 50 minutes or less depending how dry or moist you like your chicken. 2. If you do not wish to go through the entire process of getting the ingredients and preparing it, you may also buy your Jerk Sauce pre-done - JAMAICA JERK SAUCE which you can now buy at most major grocery in their culture or seasoning isle and then move to step 2 of the instructions. Have fun trying the recipe if you have never had Jerk Chicken before.

Saviour-V teleports in... For a moment there, I thought you meant "Jerk's Chicken" or "Jerky Chicken" or something. I'll keep this recipe saved. I don't think they have jerk sauce here in Malaysia, so this might be a welcome change if I can make it meself...^_^; Many thanks for the recipe, by the way! Saviour-V bows to mylife1972, before teleporting out...
