Healthy Squash for Fall

Fall and Winter squash are flavorful, low in calories and high in vision-saving vitamin A. Unlike summer squash and zucchini, they have a creamy middle that's ideal for soups and sauces. Best for a side dish: acorn squash. It's sweet and slightly spicy. Heat oven to 350 degrees. Line a baking dish with foil. Halve squash lengthwise and remove seeds. Place cut side down in dish and add 2 tablespoons water; bake 35 minutes. Sprinkle with 2 tbsp goat cheese and 1/2 teaspoon chopped fresh rosemary. Enjoy.
