How do make box cake fluffy?

I made cupcakes today with my lil girl. THey taste great but how do you make them fluffy without changing the taste too much and keeping them moist? Anyone have that problem?

I'm not sure if it helps make it fluffy - but adding the same flavor pudding really keeps it moist.
