i made gluten-free cookies the other day...

i recently found out that i'm allergic to wheat. this has made my way of eating very challenging. i never realized before how many things have wheat in them. even licorice and soy sauce have wheat in them. i tried making gluten-free bread. it has the texture of muffins and tastes really horrible. yesterday, i tried making chocolate chip cookies and oatmeal raisin cookies using rice flour instead of wheat. they actually turned out very well. they have the texture and taste of "real" cookies. i even gave some to my husband to try. he said, "hey, you're not supposed to be eating wheat" . when i told him they had no wheat in them, he was totally shocked. now, i just have to figure out how to make gluten-free bread edible...lol

That's great that you made a gluten-free cookies.. My son has autism and I would love to find some good gluten-free recipes to make for him. Which recipe book do you use? Or do you make your own recipes? It is really hard to find food products that are wheat free. I would love to find a good blueberry muffin gluten-free recipe. My son love's blueberry muffins and he love's them more when they are homemade. :)

i took a bunch of gluten-free cookbooks out from the library. one of them was "You Won't Believe It's Gluten-Free!" by Roben Ryberg. so far, i've made only the cookies from that cookbook and they turned out great. i omitted the baking soda from the cookies and used only baking powder because i found when i used baking soda, there was a really strong baking soda type taste in the cookies that i didn't like.

i forgot to mention... almost all recipes i've come across for gluten free baking call for xanthan gum or guar gum. you can interchange each of these in equal proportions. i find the gum's to be too expensive and hard to find. i substitute double the unflavored gelatin for the amount of xanthan gum or guar gum called for in the recipe. so if the recipe calls for 1 tsp of xanthan gum or guar gum, i use 2 tsp unflavored gelatin. it seems to work out very well.

That sounds great. I am sorry that the bread did not turn out better. I hope that with the recipe book from the library things will be getting better for you.

I have a friend whose little boy can't have gluten, dairy, soy, or fat. He literally eats like 3 things. It won't kill him if he eats it on occasion but it will if he eats it even semi regularly. He is only 5 years old. So I'm sorry about the special diet thing, I know it can be a pain.

thanks for your response. yes, it is very hard to be on a special diet. i'm like your friends son... i can eat wheat in very small quantities but when i do, my throat swells up and i have a hard time breathing. so, i try to avoid it completely
