Adobo is one of my favorites! I have different cooking styles for it, may it be pork, chicken or the combo of it First, the adobong matanda, it's the non saucy adobo, i'll let the sauce simmer and let the pork/chicken be fried in it's own oil. Second is the Adobo with Pineapple chunks. I marinate the pork/chicken with the pineapple chunks (the one in can) overnight. Third, the adobo with tomato, first i boil the pork/chicken with lots of pepper and small amount of patis (fish sauce) until it's tender then set it aside and it's stalk, then i saute tomatoes, onion and garlic and put the boiled pork/chicken in it, then do adobo cooking with soy sauce, vinegar, laurel leaf, more pepper and sugar to taste. i don't cover the pan when i put the vinegar to lessen the smell of it. Lastly, the adobo sa gata (coconut milk), just the same process of cooking adobo but the added ingredients are coconut milk and ginger. Who wants my adobo??

Hi again! Thnkx for the compliments! haha! But i have no Cebuano blood running in me. My father is Ilocano and mom is pure Tagalog. I really do love cooking, i think i got it from my parents and my grandmother, she has a carinderia before Mabuhay ang Adobo

i really love adobo too. Actually i have made a recipe review to a site. Well, there's a lot of ways on how to cook an adobo recipe. You can cook it at dry or soupy. I guess your friend's mom added coconut milk on that. I am not sure, its just a wide guess.

our adobo here in cebu is dry. which is weird - well, not weird. maybe culturally different coz in manila, when we say "adobo' it has a little sauce. about the coconut milk, i don't know how to blend that in the adobo but i have instructions posted above in this post. courtesy of rowena. thanks for sharing, jenn. =)

i dont cook adobo for i cant get it right or i cant balance the taste. but my sister cooks a tasty adobo. she rubs the meat with sugar before cooking it. puts garlic (of course that is the usual) and knorr seasoning not soy sauce. then a cup of water. when the meat is tender already she will pour the right amount of vinegar. i fnd her adobo very tasty hope you can get a good strategy with this.
