I am a Jamaican and am interested in new and interesting dishes. If there is anyone out there who would like to learn and share their recipes with me i would be so happy. I am a housewife and i like making special things for my family. Here is a simple dish SEASON RICE; I hope you like it. 1 lb pumpkin peeled and cubed 1 large onion, chopped 1 large tomato, chopped 1 medium sweet pepper, chopped (green) 3 medium cloves garlic, chopped 1/4 pound codfish (boiled to remove excess salt)and de boned, and shredded 7or8 sausages,chopped (any brand of your choice) 1 pound white rice 1 can mixed vegetables 1 can sweet corn 1/4 cup tomato ketchup 1/4 stick margerine 2 tablespoon vegetable oil 1/4 tea spoon black pepper Adobo, or mrs. Dash spice to taste Method Put 4 cups water to boil, add 1 teaspoon salt, place pumpkin cubes in water also. Wash rice 2 or 3 times and add to water.(reduce heat). In a saucepan heat oil, add garlic,onions,tomatoes,sweet pepper to saute', then add codfish and sausages, brown for awhile. Drain can of mixed vegetables and add to saucepan,add sweet corn with liquid from can to saucepan, add margerine, spices and ketchup to pan. Allow to simmer until thick sauce appears. Pour mixture in rice and combine properly. Remove from flame when rice is cooked. This can serve 4 to 5 persons. I HOPE YOU ENJOY!!!!! I just believe good food brings family and friends together.
