How do you use left over ham?

I like to freeze the leftover ham to be used in various ways over the next few months or so. I will use it for ham and beans and corn bread, split pea soup, or fry ham slices with fried potatoes and some vegetable. I might also use it for omelets. What kinds of ways do you use left over ham?

I don't have a meat grinder although my mother used to make ham salad and bologna salad when I was little. I never liked it back then but I do now.

I have some ham leftover that I was thinking about using to make some ham salad. Right now I am sick of ham and nothing sounds good to use it for! LOL I will probably wait until the first of the week and fix some ham salad for sandwiches.

That is why I am freezing all my leftover ham. I am tired of it already and just made it for last night when we had our family Christmas. I just finished putting it into the freezer a few minutes ago.

I use ham to liven up all kinds of soups. I also use it as a substitute for bacon in other recipes, such as risotto. Sometimes I fry some onions and then add flour and milk to create a white sauce. Season it and add ham and serve with mashed potato and/or other vegetables. Braised leeks are good with ham added too! If you go in for making liver pate then ham is good chopped up fine in that. Gosh...the list is endless!
