I made my own pizza dough a few weeks ago and it turned out okay, it wasn't as great as I hoped it would be and would like to try again with some help from you mylotters to improve the recipe :) Ok, heres my base: 3 cups of bread flour 1 package active dry yeast 2 table spoons of olive oil 1 table spoon of sugar 1 table spoon of salt 1 cup of warm water The bread was pretty fluffy but it didn't at all get the same kind of crunchy crust that I was hoping for. I don't know what went wrong:P (if anyone is interested I also made a blog post about this - http://kinglyfoods.com/content/pizza )

And describe the bread and crust please :) Mainly I think I'm looking to make my recipe more Euro-style-pizza.

Any kind of fat - olive oil, butter, lard, etc - inside of the dough will make it soft and just... blaaa! I make mine very, very simple. 2 cups bread flour(thereabouts) Package of yeast Water (not sure how much because I don't use measuring cups to cook lol) Heavy pinch of salt Touch of sugar What I do first is put some warm water (maybe a cup's worth) into my mixing bowl. Then, I'll mix in the yeast and sugar and then about half of the flour. It'll make a thin paste, and I'll leave that set for about 30 minutes. It really helps the gluten to develop. Then I'll finish it off with flour until it's a sticky ball; knead for about 10 minutes; cover and let rise. After I knuckle it down, I'll split the dough into separate halves. I'll then roll 'em up into balls and let 'em sit for another 10 minutes. My dough always comes out super crisp on the bottom, chewy in the center, and just a good all-around flavor. I'll sprinkle the top of my pizza with olive oil to get that flavor, but never in the crust. A fresh, homemade sauce really makes the flavor pop, too. I use a can of tomato puree, a 1/2 tsp of fennel seed, tsp each of garlic powder, onion powder, italian seasoning, sugar, and then a drizzle of olive oil. Simmer for 10 minutes and it's the best ever. Another good tip on the crust: you may need a hotter oven (i use 500), and you could use some cornmeal on the bottom.
