Summer Salad mixes and dressings. What are the best and simplest versions?

The most important thing for me when making a salad is knowing all ingredients are fresh and free from chemical sprays. In winter I never make a salad except for using the Lamb's Lettuce and bean sprouts that I grow myself. I am lucky enough to have a huge garden at my disposal and a large balcony on my flat. In summer I have loads of fresh fruit and vegetables always available. My favourite salad is to cut whatever is ready on my balcony, wash it and sit outside in the sun eating it. The ingredients can be all or any combination of the following; Brown lettuce, green lettuce, tomatoes, spring onions, chives, cucumber, green peppers, red peppers, yellow peppers, basil and parsley. If I have a carrot or apple which has come from my garden I may grate one or the other and add it. I know everything is fresh and has not been chemically treated. I will then mix some horseradish sauce with salad cream or mayonnaise and mix that well in. That gives it a real tangy taste. Be careful with the horseradish, it can be really hot. Now I spray some balsamico vinegar over the whole thing. It is now ready to eat or, maybe if I am hungry, I will add a tin of herring or tuna. I am open to ideas but will never add oil to my salad or allow my guests to murder my fresh and lovely vegetables by doing so. Do not pay any attention to my dislikes however, tell me what you like and maybe, just maybe, I will give it a try.

Hi aweins, thank you for your response. Pepper and lemon juice is a good idea. I will try that and maybe also lime juice to see which is best.

Chemical sprays is very bad for each and every type of salads. In salads fresh fruits and vegetable are desired.

Thanks for response. Unfortunately all that you buy in the shops have been chemically treated. I used to live near a market garden and could see the lettuce being sprayed every week. When I cut salad crops from my own balcony or garden I know they are fresh and free of chemicals.
