Hi All My very first post and first discussion on mylot so please be gentle... Recently my girlfriend and I have been getting into sushi, and really enjoying it. We've looked into finding a decent Sushi restaurant near us but the only one we've found is quite a drive from us, so we've been thinking about maing our own. In our local supermarket, they have most of the important supplies for sushi making, the right rice, the wraps, etc etc but I've been looking for recipes and don't know quite where to start. Does anyone here make their own sushi? If so, any tips, any nice recipes, any advice? Any help much appreciated. Thanks

first of all welcome to mylot. yes, i make our own sushi, but im not that really into the right kind, as long as i have nori (wraps) here, i make one whatever ingredients is available, sometimes i use local rice, just add egg, or any vegetable and wrap it in nori... sometimes i buy tuna and make it as the only filling. sometimes i use ham. that is really up to you to experiment. if you want good recipes, try googling it, you'll find many on the net. we love sushi here even though we're not japanese.

Thanks for your response. Any particular favourites when it comes to making your own sushi? I've done some googling and there are so many ideas coming up I can't decide what to try. Also I would like to try some more adventurous typse but again there seems to be a lot of choice and I'm a very indecisive person....lol

well i like those with crab sticks... basically its the nori that makes the difference in taste. and also the soy dip, i add a little bit of oyster sauce in the dip. i like sushi with nori... im not much into making sushi without nori...lol next time if my sis-in-law will give me nori, i'll use fried fish as filling...

That's a good idea, I might try crabsticks, I like those and they have the type of flavour I think would compliment the rice very well. Any tips when it comes the actual rolling?

I've made sushi at home from time to time. Having the right ingredients and equipment is important. In addition to the correct type of rice and the seaweed paper, you will also want a rolling mat (usually made from thin strips of bamboo woven together). You can just use a piece of plastic wrap or aluminum foil to roll the sushi, but it's pretty difficult. For sushi rice, my favorite recipe by far is Mom's Sushi Rice from www.allrecipes.com. Just ignore the konbu seaweed that's called for. It's not necessary. Then you just need to decide on ingredients. I prefer not to work with raw fish, because I don't want to worry about sanitation hazards. I usually make California rolls which include cooked crab meat (or imitation crab), cucumber strips, avocado, and sometimes shredded carrot. You can experiment with various vegetables that you like. I've seen broccoli, beets, radishes, cucumber, zucchini, and tons of other vegetables in sushi. I personally prefer to keep it simple, though. Good luck!

Thanks for your response. I will check out the recipe you mentioned, good to have one recommended as there is so much out there it's hard to know which are good and which aren't. Thank you for the filling suggestions, I think I will have a go with some of those, they sound great.
