Meat Loaf recipe

Yet another meat loaf! In these hard economic times, we need a way to stretch our meats. The best way I can think of is meat loaf. 1/2 cup bread crumbs 1/2 cup milk 1 medium onion 3 cloves garlic (optional) 1 tsp butter 1 tsp olive oil 1/4 cup grated cheddar cheese (mozzarella is too mild) 1 pound ground meat (beef works well) Mix first two ingredients and set aside until milk is absorbed. Fry onions and garlic in butter and oil, and set aside in fridge for 10 minutes. in a big bowl, mix ground meat, cheese, onion and garlic mixture and bread crumbs. Mash into a loaf pan cover and bake for 40 minutes at 350F or until meat is well done. This recipe does have a fair amount of shrinkage. Don't worry about all that extra moisture your meat loaf will still be very moist and tender.

not bad, I used fresh mushrooms in my last meat loaf, but that was years ago, before I joined up to myLot. It didn't work too well, because I didn't precook the mushrooms, so the loaf just fell apart when I took it out of the pan. It got mushy from mushrooms! Now I know better, and I fry up my mushrooms, onions, and garlic before adding them to the meat. If you noticed, there's no eggs, and that's because I'm allergic to them. This recipe doesn't need them.
