I have been a fan of aloe vera since my mother introduced it to me. Not only is it good for dermal applications, but also helps with digestion. The only problem I have with this plant is that if you plan on growing it, you have to make sure you have the right kind. I found that most aloe vera plants found commonly around town are very bitter. So I was wondering how aloe vera drinks got rid of the bitterness in the plant, and they taste so good. I really like the ones with huge chunks of aloe in the drinks and thought it would be great if you could make it a snack. How do you remove the bitterness in aloe vera?

Apparently, it is all in how you process the leaves, ie where you cut, what you cut, etc. Here is a link: http://www.scipub.org/fulltext/AJAB/AJAB32502-510.pdf It is a PDF, so once you bring the PDF up, hit the "search" button (binoculars at the top) and type in "bitter". There is lengthy explanation contained in there.
